Meal Planning: Week of June 15th

Review from last week:

These chicken lettuce wraps immediately become a favorite after making them for the first time.  We agreed that we will make it with chicken breast next time vs. the ground chicken the recipe called for. 


The chicken avocado burritos were super simple to make.  A little bland, too - but did the trick.
 

This was a good one!  Arepas de Carne Molida.  The Arepas were made with a cup of masarepa, 1 cup of water and a pinch of salt - and then fried to make little patties). Yum.
 

Salmon burgers.  SO good.  A delicious dinner worth every carb. 


Chicken Piccata.
 

Plan for next week: 

Friday: Tonight, we are heading up to Dan and Jeannette's new house to help them do a little unpacking and will probably throw something on the grill with them.

Saturday:  Dinner party!  Having flank steak and Mediterranean Orzo Salad.

Sunday: Leftovers

Monday: Mediterranean Chicken & Quinoa Salad.  (Had this at Panera Bread and planning to recreate: quinoa, kale, romaine, cucumbers, kalamata olives, tomatoes (I'll use bruschetta sauce from Trader Joe's), and toasted almonds with Greek dressing. Topped with grilled chicken.

Tuesday: Greg has plans to go out with friends, so Ben and I will throw something easy together.

Wednesday: Dinner at Shauna and Brandon's house!

Thursday: Crockpot Kalua Pork, slaw, and Cilantro Lime Cauliflower "Rice"

Friday: Leftover Pork
